Skillet-caramelized apples

Apple slices sautéed until golden, caramelized with nothing but dates.

Rico's note: Ready in 20 minutes, for when you want a warm dessert and don't have the patience to turn on the oven.

Ingredients

  • 4 reinette apples, thickly sliced (600 g / 1¼ lb)
  • 2 tbsp coconut oil (20 g / ¾ oz)
  • 1 tsp ground cinnamon (3 g)
  • 4 Medjool dates, blended with water (80 g / 2¾ oz)
  • ½ lemon, juice only (15 g / ½ oz)
  • toasted sliced almonds (15 g / ½ oz) — to serve

Method

  1. Blend the dates with a little water into a paste.
  2. In a skillet, melt the coconut oil over medium heat.
