Skillet apple tart

No oven, no flour — the almond and coconut base makes all the difference.

Rico's note: For when you don't want to turn on the oven but really want a slice of apple tart with your afternoon snack.

Ingredients

  • 100 g (3½ oz) ground almonds
  • 50 g (1¾ oz) shredded coconut
  • 3 blended dates (72 g / 2½ oz)
  • 2 tbsp melted coconut oil (20 g / ¾ oz)
  • 3 apples, thinly sliced (360 g / 12½ oz)
  • 1 tsp ground cinnamon (2 g)
  • ½ lemon, juice only (15 g / ½ oz)
  • 2 tbsp water (30 g / 1 oz)

Method

  1. In a bowl, mix the ground almonds, shredded coconut, blended dates and melted coconut oil.
  2. Press the mixture over the bottom of a nonstick skillet to form a compact crust.
