Simple homemade kombucha

Your first batch of kombucha, from scratch, with just four ingredients.

Rico's note: Store-bought bottles of kombucha add up to a small fortune — homemade costs far less and lets you control the fizz.

Ingredients

  • 1 liter (4¼ cups) water
  • 8 g loose-leaf black or green tea (or 4 tea bags)
  • 70 g (2½ oz) white sugar — feeds the culture; part of it is used up during fermentation
  • 1 SCOBY (kombucha culture)
  • 100 ml (½ cup) ready-made kombucha (starter liquid)

Method

  1. Boil the water and dissolve the sugar in it; remove from the heat and add the tea bags or loose-leaf tea.
  2. Let the tea steep for 15 minutes, then remove the leaves or bags.
