Savory oat pancakes

A neutral, protein-rich base for stacking salmon, egg or vegetables.

Rico's note: These savory pancakes can stand in for bread at your afternoon snack — add some fresh cheese (queijo fresco) and a tomato and it feels like a proper meal.

Ingredients

  • 60 ml (¼ cup) egg whites — or 1 egg
  • 70 g (2½ oz) cottage cheese
  • 4 tbsp oat flour (40 g / 1½ oz)
  • salt and pepper, to taste
  • olive oil, for greasing

Method

  1. In a bowl, whisk the egg white with the cottage cheese and season with salt and pepper. Mix until smooth.
  2. Add the oat flour and stir until you have a thick batter.
