Rustic gluten-free psyllium bread

A crackly crust outside, a soft and springy crumb inside.

Rico's note: Save this bread for a morning when you have time to spare — between the two rises you can get other things done in the kitchen, and the smell of the rising dough makes the wait worth it.

Ingredients

  • 8 g active dry yeast
  • 20 g (¾ oz) sugar — to activate the yeast
  • 150 g (5½ oz) warm water — for the yeast
  • 240 g (8½ oz) cold water — for the psyllium gel
  • 20 g (¾ oz) psyllium husk flakes — if you use psyllium powder, use only 75% of this amount
  • 130 g (4½ oz) buckwheat flour
  • 100 g (3½ oz) potato starch
  • 90 g (3¼ oz) very fine brown rice flour — save a little extra for sprinkling
  • 10 g salt
  • 12 g apple cider vinegar

Method

  1. In a small bowl, dissolve the yeast and sugar in 150 g of warm water. Let it sit for 10–15 minutes, until a layer of foam forms on top; if nothing happens, the yeast is no longer active and you'll need to start over with fresh yeast.
  2. In a separate bowl, mix the psyllium with the 240 g of cold water and stir well for a few seconds. It quickly turns into a thick gel — make it right before you need it so it doesn't lose its consistency.
