Roasted salt cod with peppers and onion
A quicker Portuguese classic, with all the flavor you know.
Ingredients
- 2 soaked (desalted) salt cod steaks (400 g / 14 oz) — 200 g each
- 2 red bell peppers, cut into strips (300 g / 10½ oz)
- 1 large onion, cut into half-moons (150 g / 5½ oz)
- 4 cloves garlic, sliced (20 g / ¾ oz)
- 2½ tbsp extra-virgin olive oil (25 g / 1 oz)
- 1 tsp smoked paprika (2 g)
- salt and black pepper, to taste
Method
- Precook the bell peppers and onion with half the olive oil, the garlic and salt in the air fryer at 190 °C (375 °F) for 10 minutes.
- Pat the salt cod steaks dry and season with the smoked paprika, pepper and the rest of the olive oil.
