Roasted peaches with date paste

Warm, caramelized, and ready after twenty minutes in the oven.

Rico's note: Make this when peaches are at the height of their season and you want a warm dessert without much fuss.

Ingredients

  • 4 peaches (600 g / 1¼ lb)
  • 3 Medjool dates, pitted and blended (72 g / 2½ oz)
  • 1 tsp ground cinnamon (2 g)
  • fresh mint, to taste
  • 15 g (½ oz) toasted chopped almonds
  • water, as needed — to thin the date paste

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. Wash the peaches, halve them and remove the pits.
