Rice flour vanilla cake
A pale, fluffy vanilla cake made only with rice flour.
Ingredients
- 2 cups rice flour (300 g / 10½ oz)
- 1 cup cassava starch, polvilho doce (120 g / 4 oz)
- ⅔ cup sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (200 g)
- 1 tbsp baking powder (12 g)
- 1 tsp xanthan gum (3 g)
- 4 eggs (200 g / 7 oz)
- ⅔ cup coconut oil (133 g / 4½ oz)
- 1 cup almond milk (240 g / 8½ oz)
- 1 tbsp vanilla extract (13 g)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Preheat the oven to 180 °C (350 °F). Grease and flour the cake pan.
- Sift and combine the dry ingredients: rice flour, cassava starch, sugar, baking powder and xanthan gum.
