Quinoa cake

Quinoa flour and flakes together, for a more rustic texture.

Rico's note: A great way to use up leftover quinoa flakes — and the result beats a bowl of porridge by a mile.

Ingredients

  • 120 g (4 oz) quinoa flour
  • 158 g (5½ oz) rice flour
  • 45 g (1½ oz) quinoa flakes
  • 105 g (3¾ oz) sugar — no added sugar: 150 g erythritol
  • 1 tbsp baking powder (14 g)
  • 1 tsp ground cinnamon (3 g)
  • 3 eggs (150 g / 5½ oz)
  • 109 g (3¾ oz) coconut oil
  • 120 ml (½ cup) unsweetened almond milk

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a cake pan.
  2. In a bowl, combine the quinoa flour, rice flour, quinoa flakes, sugar, baking powder and cinnamon.
