Quinoa and olive stuffed peppers

A complete vegan meal, colorful and easy to take to work.

Rico's note: Make a batch on Sunday for the week ahead — they're filling and taste even better the next day.

Ingredients

  • 2 large bell peppers, red and yellow (300 g / 10½ oz)
  • 150 g (5½ oz) cooked quinoa
  • 1 medium tomato, chopped (130 g / 4½ oz)
  • 50 g (1¾ oz) pitted black olives
  • 10 g fresh oregano
  • 1½ tbsp extra-virgin olive oil (15 g / ½ oz)
  • salt and black pepper, to taste

Method

  1. Cut the tops off the peppers and clean out all the seeds.
  2. Mix the quinoa with the tomato, olives, oregano, olive oil, salt and pepper.
