Protein quinoa rice pudding

All the creaminess of classic rice pudding, made with quinoa and lemon peel.

Rico's note: Make a single bowl of this when you're craving a proper spoonable dessert.

Ingredients

  • 40 g (1½ oz) quinoa, uncooked (or oats or rice)
  • 1 cup unsweetened almond milk (240 g / 8½ oz)
  • 1 egg (50 g / 1¾ oz)
  • 60 g (2 oz) plain Greek yogurt
  • 25 g (1 oz) protein powder (or sugar to taste)
  • 1 strip lemon peel (2 g)
  • ½ lemon, zest only (1 g)
  • ground cinnamon, to taste
  • 1 pinch salt (1 g)

Method

  1. In a saucepan, combine the quinoa with the almond milk, lemon peel and pinch of salt.
  2. Cook over low heat, stirring now and then, for about 15 to 20 minutes, until the quinoa is fully cooked and creamy.
