Rico's note: The key to the creaminess here is the Greek yogurt, not the cream.

Ingredients

  • 150 g (5½ oz) light cooking cream (15%)
  • 60 g (2 oz) reduced-fat sweetened condensed milk
  • 100 g (3½ oz) low-fat Greek yogurt
  • 25 g (1 oz) vanilla protein powder
  • 20 g (¾ oz) Maria cookies — for the mix-in
  • 10 g honey — to serve
  • milk, as needed — only if you need it for the RE-SPIN

Method

  1. In a bowl, mix the light cream, reduced-fat sweetened condensed milk, Greek yogurt and protein powder until smooth (give it a quick blitz with the immersion blender to make sure the protein dissolves completely).
  2. Pour into the pint container without going past the MAX line, cover and freeze on a flat surface for 24 hours.
