Protein cheese bread

A soft crumb, lots of cheese and hardly any wheat flour.

Rico's note: Blend everything before heading to the gym and let it bake while you shower — warm bread for the rest of the week. Whatever you don't eat within 4 days goes in the freezer.

Ingredients

  • 1 cup cottage cheese (200 g / 7 oz)
  • 2 large eggs (100 g / 3½ oz)
  • ⅓ cup almond flour (40 g / 1½ oz)
  • 2 tbsp oat flour (20 g / ¾ oz)
  • ⅓ cup shredded reduced-fat cheese (35 g / 1¼ oz)
  • salt, garlic powder, pepper and dried parsley or other herbs, to taste

Method

  1. Put the cottage cheese, eggs, almond flour, oat flour, salt and seasonings in the blender. Blend until you have a thick, smooth batter.
  2. Fold in the grated cheese by hand and pour the batter into a silicone mold or a pan lined with parchment paper.
