Protein carrot muffins

Fluffy carrot muffins with optional chunks of dark chocolate.

Rico's note: Perfect for using up the carrots left over from the week's soup — nothing goes to waste.

Ingredients

  • 2 small carrots (200 g / 7 oz)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup cottage cheese (100 g / 3½ oz)
  • ½ cup low-fat Greek yogurt (100 g / 3½ oz)
  • 1 cup oat flour (125 g / 4½ oz)
  • 100 g (3½ oz) protein powder (or oat flour + sugar to taste)
  • cinnamon, to taste
  • 25 g (1 oz) 85% dark chocolate — optional; no added sugar: sugar-free 85% dark chocolate

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. Blend the carrots, eggs, cottage cheese and yogurt until you have a smooth cream.
