Protein arroz doce (Portuguese rice pudding)

The cinnamon and lemon classic, creamy, with 21 g of protein per serving.

Rico's note: Whenever there's rice left over from Sunday lunch, turn it into this before it ends up in the trash.

Ingredients

  • 200 g (7 oz) cooked white rice (day-old or leftover)
  • 250 ml (1 cup) reduced-fat milk
  • 35 g (1¼ oz) vanilla protein powder — about 1 heaping scoop
  • 15 g (½ oz) honey
  • 1 cinnamon stick (3 g) — just for flavor; remove before blending
  • lemon peel, to taste
  • salt, to taste
  • milk, as needed — only if you need it for the re-spin (or kefir, if you have it)

Method

  1. Heat the milk with the cinnamon stick and lemon peel just until it comes to a boil, take it off the heat and let it cool for 5 minutes — there's nothing else to cook, the rice is already cooked.
  2. Remove the cinnamon and lemon peel, then add the rice, honey, protein powder and a pinch of salt.
