Ingredients

  • 1 cup almond flour (100 g / 3½ oz)
  • ¼ cup cocoa powder (30 g / 1 oz)
  • ⅓ cup sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (90 g)
  • 1 tsp baking powder (4 g)
  • 2 eggs (100 g / 3½ oz)
  • 3 tbsp coconut oil (37.5 g / 1¼ oz)
  • ¼ cup coconut milk (60 g / 2 oz)
  • 1 cup unsweetened shredded coconut, for the filling (80 g / 2¾ oz)
  • 2 tbsp sugar, for the filling (24 g / ¾ oz) — no added sugar: 3 tbsp erythritol (for the filling) (34 g)
  • 45 ml (3 tbsp) coconut milk (for the filling)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a loaf pan.
  2. Make the filling first: mix the shredded coconut, sugar and coconut milk into a thick paste that holds its shape. Set aside.
