Portuguese-style scrambled eggs with vegetables

A hearty breakfast, ready in 15 minutes.

Rico's note: Take the skillet off the heat just before the eggs are done — they keep cooking in the residual heat and don't dry out.

Ingredients

  • 6 large eggs (300 g / 10½ oz)
  • 1 medium tomato, chopped (120 g / 4 oz)
  • ½ green bell pepper, chopped (75 g / 2¾ oz)
  • ½ small onion, finely chopped (50 g / 1¾ oz)
  • 1 tbsp extra-virgin olive oil (10 g)
  • chopped fresh parsley, to taste (5 g)
  • sea salt and black pepper, to taste

Method

  1. Beat the eggs in a bowl with salt and pepper.
  2. In a nonstick skillet, heat the olive oil over medium heat. Add the onion, bell pepper and tomato and sauté for 3–5 minutes, until softened.
