Poached pears with Christmas spices

Whole pears in a spiced syrup, without a drop of sugar.

Rico's note: A Christmas classic, but it works all year round when you want a dessert that looks like more work than it really is.

Ingredients

  • 4 Rocha pears, peeled (720 g / 1½ lb)
  • 500 ml (2 cups) water
  • 1 cinnamon stick (3 g)
  • 2 star anise (6 g)
  • 4 whole cloves (0.8 g)
  • 1 slice fresh ginger (10 g)
  • 3 Medjool dates, blended into a paste (72 g / 2½ oz)

Method

  1. Peel the pears, leaving the stems intact.
  2. Put them in a saucepan with the water, cinnamon stick, star anise, cloves and ginger.
