Pineapple upside-down cake

An upside-down cake with pineapple rings caramelized in sugar.

Rico's note: Pineapple upside-down cake is the one to bring when you want to show off without any fuss. The trick is turning it out while it's still warm, before the caramel sets for good.

Ingredients

  • 4 fresh pineapple rounds, or canned in sugar-free syrup (200 g / 7 oz) — for the caramel
  • ⅓ cup sugar (65 g / 2¼ oz) — for the caramel; no added sugar: ½ cup erythritol (100 g)
  • 3 tbsp water (45 g / 1½ oz) — for the caramel
  • 1½ cups almond flour (144 g / 5 oz) — for the batter
  • ½ cup coconut flour (56 g / 2 oz) — for the batter
  • ⅓ cup sugar (65 g / 2¼ oz) — for the batter; no added sugar: ½ cup erythritol (100 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ⅓ cup coconut oil (67 g / 2¼ oz)
  • ½ cup coconut milk, or pineapple juice (120 g / 4 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. In a small saucepan, melt the sugar with the water over low heat (about 160 °C (325 °F)). In the no-added-sugar version, the erythritol won't turn golden like sugar, but it will melt and turn liquid.
