Peanut chocolate marble cake

Two batters — peanut and chocolate — marbled in the same pan.

Rico's note: A great post-workout cake to bake on Sunday — peanut and chocolate never fails, and it slices well for the week ahead.

Ingredients

  • 1 cup peanut flour (112 g / 4 oz)
  • 1 cup almond flour (96 g / 3½ oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (142 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup unsweetened almond milk (120 g / 4 oz)
  • ⅓ cup peanut oil, or coconut oil (72 g / 2½ oz)
  • 2 tbsp cocoa powder (11 g) — for half the batter
  • 15 ml (1 tbsp) unsweetened almond milk — extra, for the cocoa

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Combine the dry ingredients: peanut flour, almond flour, sugar and baking powder.
