Peanut butter bread

Five ingredients, a cake-like texture and real peanut butter flavor.

Rico's note: Mix it all in a stand mixer while you tidy the kitchen — it's in the oven in five minutes. A slice topped with sugar-free jam makes a great post-workout snack.

Ingredients

  • 260 g (9 oz) unsweetened natural peanut butter
  • 4 eggs (200 g / 7 oz)
  • 2 tbsp white or brown sugar (24 g / ¾ oz) — no added sugar: 3 tbsp erythritol (36 g)
  • 1 tsp apple cider vinegar (5 g)
  • 1 tsp baking soda (5 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Heat the oven to 180 °C (350 °F) and grease a small pan.
  2. With a mixer, beat the peanut butter, eggs and sugar for 3–4 minutes, until creamy and airy.
