Peanut butter baba de camelo (Portuguese mousse)

A light mousse of stiffly beaten egg whites with a hint of peanut.

Rico's note: A dessert you'll soon be able to make with your eyes closed, for when you want something light after dinner.

Ingredients

  • 5 eggs (250 g / 9 oz) — use pasteurized eggs: the recipe isn't cooked
  • 2 tbsp powdered peanut butter (30 g / 1 oz)
  • 2 tbsp sugar (24 g / ¾ oz) — no added sugar: 2 tbsp xylitol (20 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect. Keep it away from dogs: xylitol is toxic to them.

Method

  1. Separate the yolks from the whites. Whip the whites to very stiff peaks.
  2. In a bowl, combine the yolks with the powdered peanut butter and sugar and mix well.
