Peaches with coconut cream

Fresh peach slices topped with chilled whipped coconut cream.

Rico's note: The dessert for August, when peaches are just right and you don't feel like cooking anything.

Ingredients

  • 4 ripe peaches (600 g / 1¼ lb)
  • 300 ml (1¼ cups) coconut cream
  • 3 Medjool dates, blended into a paste (60 g / 2 oz)
  • 1 tsp vanilla extract (3 g)
  • ½ lemon, juice only (15 g / ½ oz)
  • fresh mint — to decorate
  • sliced almonds (15 g / ½ oz) — to decorate

Method

  1. Whip the coconut cream with the blended dates and vanilla until fluffy.
  2. Refrigerate the cream for 1 hour.
