Peach and passion fruit sorbet

Sweet and tart at once, with passion fruit seeds for texture.

Rico's note: Make this in summer, when peaches are at their best and there's more ripe fruit than you can eat on its own.

Ingredients

  • 280 g (10 oz) frozen peaches, diced
  • 2 passion fruit, pulp only (100 g / 3½ oz)
  • ½ lemon, juice only (15 g / ½ oz)

Method

  1. Put the frozen peach, passion fruit pulp and lemon juice in a food processor.
  2. Blend until creamy, stopping to scrape down the sides.
