Passion fruit cake

A moist passion fruit cake with just the right tang.

Rico's note: When you find passion fruit flour at the market, grab some for this cake. It absorbs a lot of liquid, so let the batter rest before it goes into the oven.

Ingredients

  • 1 cup passion fruit flour (90 g / 3¼ oz)
  • 1 cup almond flour (96 g / 3½ oz)
  • 1 cup rice flour (150 g / 5½ oz)
  • ⅔ cup sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (200 g)
  • 1 tbsp baking powder (12 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • 1 cup unsweetened concentrated passion fruit juice (240 g / 8½ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a cake pan.
  2. In a bowl, mix the flours (passion fruit, almond and rice), sugar and baking powder — passion fruit flour is very high in fiber and absorbs a lot of liquid.
