Passion fruit and chocolate marble cake

Two batters, a light passion fruit one and a dark cocoa one, swirled together.

Rico's note: It takes more work than the other cakes in this collection, but the marbled effect is worth a photo.

Ingredients

  • 96 g (3½ oz) almond flour (light batter)
  • 60 g (2 oz) sweet cassava starch (polvilho doce) (light batter)
  • 70 g (2½ oz) sugar (light batter) — no added sugar: 100 g erythritol (light batter)
  • 1 tsp baking powder, light batter (5 g)
  • 2 eggs, light batter (100 g / 3½ oz)
  • 55 g (2 oz) coconut oil (light batter)
  • 60 g (2 oz) unsweetened concentrated passion fruit juice (light batter)
  • 96 g (3½ oz) almond flour (dark batter)
  • 70 g (2½ oz) white or brown sugar (dark batter) — no added sugar: 100 g erythritol (dark batter)
  • 2 tbsp cocoa powder, dark batter (11 g)
  • 1 tsp baking powder, dark batter (5 g)
  • 2 eggs, dark batter (100 g / 3½ oz)
  • 55 g (2 oz) coconut oil (dark batter)
  • 60 ml (¼ cup) unsweetened almond milk (dark batter)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a Bundt pan well.
  2. Light batter: in a bowl, combine the almond flour, polvilho, sugar and half the baking powder.
