Oven-roasted tomato soup

The oven does all the work and the tomato flavor gets more intense.

Rico's note: Make this when you have too many tomatoes and don't want to waste any.

Ingredients

  • 800 g (1¾ lb) ripe tomatoes — halved
  • 1 onion (150 g / 5½ oz) — quartered
  • 4 cloves garlic (20 g / ¾ oz) — skin on
  • 1 red bell pepper (150 g / 5½ oz) — cut into strips
  • 3 tbsp olive oil (30 g / 1 oz)
  • 800 ml (3¼ cups) water
  • fresh basil, to taste (10 g)
  • salt and pepper, to taste

Method

  1. Place the tomatoes, onion, garlic and bell pepper on a baking sheet lined with parchment paper, drizzle with the olive oil and roast at 200 °C (400 °F) for 20 minutes.
  2. Squeeze the garlic cloves out of their skins, transfer everything to a pot, add the water and simmer for 10 minutes.
