Orange cake with coconut flour
An intensely orange cake, made with 100% coconut flour.
Ingredients
- 1 cup coconut flour (112 g / 4 oz)
- ⅔ cup sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (200 g)
- 1 tsp baking powder (4 g)
- ½ tsp salt (3 g)
- 6 eggs (300 g / 10½ oz)
- ½ cup melted coconut oil (100 g / 3½ oz)
- ½ cup fresh orange juice (120 g / 4 oz)
- 2 oranges, zest only (6 g)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Preheat the oven to 180 °C (350 °F). Grease a loaf pan and line it with parchment paper (the cake won't rise much).
- In a bowl, mix the coconut flour, sugar, baking powder and salt.
