Orange almond cake

Just almond flour, eggs and orange — no oil, no leavening.

Rico's note: One of the simplest cakes there is, and one people keep asking for again — three main ingredients, zero mistakes.

Ingredients

  • 192 g (7 oz) almond flour
  • 140 g (5 oz) sugar — no added sugar: 200 g erythritol
  • 2 oranges, zest only (8 g)
  • 1 tsp ground cinnamon (3 g) — optional
  • 4 large eggs (220 g / 8 oz)
  • 1 tsp almond extract (4 g) — optional

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 170 °C (340 °F); grease a 22 cm (9 in) round pan and line it with parchment paper.
  2. In a bowl, mix the almond flour, sugar, orange zest and the cinnamon, if using.
