Molotof-style egg white pudding

Meringue baked in a water bath, light and almost fat-free.

Rico's note: Perfect for when you have egg whites left over from another recipe — nothing goes to waste and you still end up with dessert.

Ingredients

  • 10 egg whites (300 g / 10½ oz)
  • ⅔ cup powdered sugar (80 g / 2¾ oz) — no added sugar: 1 cup powdered erythritol (120 g)
  • 1 tsp cream of tartar (3 g)
  • 1 tsp vanilla (4 g)
  • 3 tbsp sugar, for the caramel (36 g / 1¼ oz) — optional; no added sugar: melted erythritol, to taste

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. If you want a caramel-coated mold, heat the caramel sugar with a splash of water in a small saucepan until it melts and turns amber, then use it to coat a tube pan. Otherwise, just grease the pan with a little coconut oil.
