Matcha and berry banana bread

A green matcha loaf, topped with cream and fresh berries.

Rico's note: For when you want a break from chocolate — matcha brings a pleasant bitterness that goes really well with banana.

Ingredients

  • 2 ripe bananas (236 g / 8½ oz)
  • 2 eggs (100 g / 3½ oz)
  • 1 cup cottage cheese (200 g / 7 oz)
  • 1 cup oat flour (125 g / 4½ oz)
  • 75 g (2¾ oz) protein powder (white chocolate flavor works well, or oat flour)
  • 2 dessert spoons (10 ml each) matcha powder (10 g)
  • 1 dessert spoon (10 ml) baking powder — optional, if you want it to rise
  • 120 g (4 oz) low-fat Greek yogurt — topping
  • 1 dessert spoon (10 ml) matcha powder — topping
  • 25 g (1 oz) white chocolate protein powder (or sugar to taste) — topping
  • 150 g (5½ oz) berries — to serve

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. Blend the bananas, eggs and cottage cheese until smooth.
