Lemon poppy seed cake

Moist, with lemon zest and the little crunch of poppy seeds.

Rico's note: Take it to the office and don't count on leftovers. Only slice it once it's completely cool, or it will crumble as you cut.

Ingredients

  • 200 g (7 oz) almond flour
  • 150 g (5½ oz) coconut sugar
  • 10 g baking powder
  • 2 lemons (60 g / 2 oz) — zest of both, juice of 1
  • 30 g (1 oz) poppy seeds
  • 3 large eggs (150 g / 5½ oz)
  • 120 ml (½ cup) plain unsweetened yogurt
  • 80 ml (¼ cup) extra-virgin olive oil
  • 5 ml vanilla extract — optional

Method

  1. Preheat the air fryer to 160 °C (325 °F).
  2. In a large bowl, combine the almond flour, coconut sugar, baking powder and poppy seeds.
