Lemon poppy seed bread

Fresh and citrusy, great for an afternoon snack.

Rico's note: The lemon zest makes all the difference here; don't hold back on it.

Ingredients

  • 180 g (6½ oz) rice flour
  • 100 g (3½ oz) almond flour
  • 80 g (2¾ oz) sugar — no added sugar: 113 g erythritol
  • 2 tbsp poppy seeds (18 g / ¾ oz)
  • 1 tbsp baking powder (12 g)
  • 2 lemons, zest only (4 g)
  • 3 eggs (150 g / 5½ oz)
  • 122 g (4½ oz) plain yogurt
  • 50 ml (3½ tbsp) coconut oil
  • 30 ml (2 tbsp) lemon juice

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Combine the flours, sugar, poppy seeds, baking powder and lemon zest.
