Lemon mint sorbet

Tart, fresh and sweetened with honey — the most refreshing on the list.

Rico's note: The one to serve after a heavier dinner — it refreshes your palate without leaving you full.

Ingredients

  • 250 ml (1 cup) fresh lemon juice — about 5–6 lemons
  • 250 ml (1 cup) water
  • 40 g (1½ oz) honey
  • 10 fresh mint leaves, finely chopped (10 g)

Method

  1. Blend the lemon juice, water, honey and mint until the mint is finely chopped and evenly distributed.
  2. Pour into the pint container without going past the MAX line.
