Intense lemon cake

Pure coconut flour and plenty of lemon juice, baked as a loaf cake.

Rico's note: This one is tangy enough to wake up your palate — cut thin slices, because it's more filling than it looks.

Ingredients

  • 112 g (4 oz) coconut flour
  • 140 g (5 oz) sugar — coconut flour soaks up the sweetness well; no added sugar: 200 g erythritol
  • 1 tsp baking powder (5 g)
  • ½ tsp salt (3 g)
  • 6 eggs (300 g / 10½ oz)
  • 109 g (3¾ oz) melted coconut oil
  • 120 ml (½ cup) coconut milk
  • 2 lemons, zest and juice (80 g / 2¾ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F), then grease and line a loaf pan — this recipe yields less batter than a regular cake.
  2. In a bowl, combine the coconut flour, sugar, baking powder and salt.
