Honey ginger baked pears

Soft pear, honey and ginger, with Greek yogurt for creaminess.

Rico's note: On colder days, this stands in for the heavy dessert you crave after dinner. Choose pears that still have some firmness, so they don't fall apart in the air fryer.

Ingredients

  • 2 firm pears, Rocha or Conference (300 g / 10½ oz)
  • 2 tbsp honey (30 g / 1 oz)
  • 1 tsp fresh ginger, grated (2 g)
  • ½ tsp ground cinnamon (1 g)
  • 1 tsp fresh lemon juice (5 g)
  • 120 g (4 oz) plain Greek yogurt — to serve
  • chopped walnuts or granola, to taste — optional

Method

  1. Wash the pears, halve them lengthwise and scoop out the cores with a small spoon. Leave the skin on — it adds fiber.
  2. In a small bowl, mix the honey, grated ginger, cinnamon and lemon juice.
