Homemade fios de ovos (Portuguese egg threads)

The classic egg-thread technique, with date syrup instead of sugar.

Rico's note: Don't be discouraged if the first batch goes wrong — it happens to everyone. The secret is not to rush.

Ingredients

  • 4 egg yolks (68 g / 2½ oz)
  • 2 tbsp cornstarch (20 g / ¾ oz)
  • 1 tsp ground turmeric (3 g) — for color
  • 200 ml (¾ cup) water — for the syrup
  • 8 Medjool dates (160 g / 5½ oz) — for the syrup
  • ground cinnamon, as needed (3 g) — for sprinkling

Method

  1. Whisk the egg yolks with the cornstarch and turmeric until smooth.
  2. In a saucepan, boil the water with the dates for 10 minutes to make a syrup, then blend it until smooth.
