Hazelnut cake with yacon syrup

Toasted hazelnut flavor, sweetened with yacon syrup instead of honey.

Rico's note: Yacon syrup is still little known, but it works well here because it doesn't overpower the hazelnut.

Ingredients

  • 2 cups hazelnut flour (192 g / 7 oz)
  • ½ cup coconut flour (56 g / 2 oz)
  • 1 tbsp baking powder (12 g)
  • 4 eggs (200 g / 7 oz)
  • ⅓ cup coconut oil (68 g / 2½ oz)
  • ½ cup hazelnut milk, or almond milk (120 g / 4 oz)
  • 3 tbsp yacon syrup, or honey (45 g / 1½ oz)

Method

  1. Heat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the dry ingredients: hazelnut flour, coconut flour and baking powder.
