Hazelnut and coffee cake

Hazelnut cake with strong coffee, great alongside breakfast.

Rico's note: This hazelnut and coffee cake is great for waking up faster at Sunday breakfast. The cold coffee in the batter adds a toasty depth without too much bitterness.

Ingredients

  • 1½ cups hazelnut flour (150 g / 5½ oz)
  • 1 cup rice flour (150 g / 5½ oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (150 g)
  • 2 tbsp cocoa powder, just for color (10 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup strong coffee, cold (120 g / 4 oz)
  • ⅓ cup hazelnut oil, or coconut oil (67 g / 2¼ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a cake pan.
  2. In a bowl, mix the flours, sugar, cocoa and baking powder.
