Rico's note: This one takes work, but it's worth it when you want to impress at a family lunch — the thin layers are intimidating at first; you get the hang of it by the third try.

Ingredients

  • 6 eggs, whites and yolks separated (300 g / 10½ oz)
  • 6 tbsp erythritol (75 g / 2¾ oz)
  • 6 tbsp almond flour (36 g / 1¼ oz)
  • 2 tbsp sweet cassava starch, polvilho doce (16 g / ½ oz)
  • 1 cup sugar-free guava paste, sweetened with erythritol (240 g / 8½ oz) — for the filling

Method

  1. Preheat the oven to 180 °C (350 °F) and line 3 or 4 rectangular baking sheets with well-greased parchment paper.
  2. Beat the egg whites to very stiff peaks and set aside.
