Green bean soup with potato and chouriço
A comforting soup of green beans, potato and a touch of chouriço (Portuguese smoked sausage).
Ingredients
- 300 g (10½ oz) green beans, cut
- 2 medium potatoes, peeled and diced (300 g / 10½ oz)
- 1 medium onion, chopped (120 g / 4 oz)
- 2 cloves garlic, minced (6 g)
- 1 ripe tomato, chopped, or ½ can peeled tomatoes (120 g / 4 oz)
- 50 g (1¾ oz) plant-based chouriço, sliced (optional)
- 2 tbsp extra-virgin olive oil (20 g / ¾ oz)
- fresh cilantro, chopped, to serve (5 g)
- salt and black pepper, to taste
- water or vegetable broth, as needed
Method
- Heat the olive oil in a large pot over medium heat. Sauté the onion and garlic until translucent.
- Add the chopped tomato and cook for 5 minutes, breaking it up with the spoon.
