Green asparagus soup

Rico's note: Set the asparagus tips aside and sauté them at the end — that contrast in texture turns a simple soup into a proper starter.

Ingredients

  • 400 g (14 oz) green asparagus spears — save the tips
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 1 clove garlic, minced (3 g)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Cut the asparagus into pieces, setting the tips aside to garnish.
  2. Sauté the onion and garlic in the olive oil until soft.
