Greek yogurt berry cheesecake

A crunchy base, a creamy Greek yogurt filling and fruit sauce on top.

Rico's note: A weekend dessert for when you want something creamy without going overboard on calories. Don't skip the two hours of chilling — that's what gives it a true cheesecake texture.

Ingredients

  • 100 g (3½ oz) graham crackers (or digestive biscuits), crushed
  • 40 g (1½ oz) unsalted butter, melted
  • 300 g (10½ oz) plain 0% fat Greek yogurt
  • 1 large egg (50 g / 1¾ oz)
  • 35 g (1¼ oz) sugar — or 1 tbsp honey; no added sugar: 50 g erythritol (or another natural sweetener)
  • 5 ml vanilla extract
  • 15 g (½ oz) cornstarch
  • ½ lemon, zest only (1 g)
  • 150 g (5½ oz) fresh or frozen berries
  • 10 g honey — optional

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Mix the crushed graham crackers with the melted butter and press firmly into the bottom of a pan lined with parchment paper.
  2. Preheat the air fryer to 160 °C (325 °F) and bake the crust for 5 minutes to firm it up.
