Ingredients

  • 2 medium carrots, grated (160 g / 5½ oz)
  • 2 tbsp raisins (20 g / ¾ oz)
  • 1 lemon, juice only (30 g / 1 oz)
  • 1 tsp olive oil (5 g)
  • cinnamon and fresh mint, to taste

Method

  1. Finely grate the carrots.
  2. In a bowl, mix the carrot with the raisins, lemon juice and olive oil.
