Golden flaxseed bread

Rich in good fats and fiber, it slices thin.

Rico's note: If you train early in the morning, this sorts out breakfast: cut two thin slices, spread with butter and eat on your way out the door.

Ingredients

  • 2 cups golden flaxseed meal (200 g / 7 oz) — freshly ground, if possible
  • 1 cup almond flour (100 g / 3½ oz)
  • ¼ cup psyllium husk powder (40 g / 1½ oz)
  • 2 tsp baking powder (8 g)
  • 1 tsp salt (6 g)
  • 5 eggs (250 g / 9 oz)
  • ½ cup warm water (120 g / 4 oz)
  • ¼ cup melted coconut oil (55 g / 2 oz)

Method

  1. Preheat the oven to 180 °C (350 °F). Grease a loaf pan very well.
  2. Vigorously mix all the dry ingredients: the flaxseed meal, almond flour, psyllium, baking powder and salt.
