Ingredients

  • 1½ cups almond flour (150 g / 5½ oz)
  • ½ cup buckwheat flour (60 g / 2 oz)
  • 85 g (3 oz) white or brown sugar — no added sugar: ⅔ cup erythritol (120 g)
  • 1 tbsp ground ginger (5.4 g)
  • 1 tsp ground cinnamon (2.6 g)
  • ½ tsp ground cloves (1 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ¼ cup water (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the dry ingredients: almond flour, buckwheat flour, sugar, ginger, cinnamon, cloves and baking powder.
