German chocolate cake

A two-layer chocolate cake topped with coconut and pecans.

Rico's note: A gluten-free take on German chocolate cake. The coconut-pecan topping is the part you can't skip.

Ingredients

  • 1½ cups almond flour (144 g / 5 oz) — for the batter
  • ½ cup cocoa powder (60 g / 2 oz) — for the batter
  • ½ cup white or brown sugar (100 g / 3½ oz) — for the batter; no added sugar: ⅔ cup erythritol (133 g)
  • 1 tsp baking powder (4 g)
  • 3 eggs (150 g / 5½ oz) — for the batter
  • ⅓ cup coconut oil (67 g / 2¼ oz)
  • ¼ cup hot water (60 g / 2 oz)
  • 1 cup unsweetened shredded coconut (80 g / 2¾ oz) — for the topping
  • ½ cup chopped pecans (50 g / 1¾ oz) — for the topping
  • ½ cup coconut milk, the creamy part (120 g / 4 oz) — for the topping
  • 2 tbsp white or brown sugar (24 g / ¾ oz) — for the topping; no added sugar: 3 tbsp erythritol (38 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. Mix the dry ingredients for the batter (almond flour, cocoa, sugar, baking powder).
