Fudgy buckwheat brownie

A moist, intensely chocolatey brownie with no wheat flour.

Ingredients

  • 1 cup buckwheat flour (120 g / 4 oz)
  • ½ cup 100% cocoa powder (45 g / 1½ oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (142 g)
  • ½ tsp salt (3 g)
  • ½ cup melted coconut oil (105 g / 3¾ oz)
  • 2 eggs (100 g / 3½ oz)
  • 1 tsp vanilla extract (4 g)
  • ½ cup 100% cacao chocolate chips, or walnuts (85 g / 3 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect. Keep it away from dogs: xylitol is toxic to them.

Method

  1. Preheat the oven to 180 °C (350 °F) and line a 20 × 20 cm (8 × 8 in) baking pan with parchment paper.
  2. In a bowl, mix the melted coconut oil, sugar and cocoa powder until smooth.
