Fresh lettuce and mint soup

Ingredients

  • 2 heads of lettuce, washed and chopped (400 g / 14 oz)
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 1 handful of fresh mint (5 g)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Sauté the onion in the olive oil until translucent.
  2. Add the diced potato and the water, and simmer for 10 minutes.
