Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Flourless turkey meatballs

Juicy, oven-baked, no breadcrumbs, ready for your lunch box.

Rico's note: Always make a double batch and freeze half once baked — it saves you a whole dinner in a busy week.

Ingredients

  • 600 g (1¼ lb) ground turkey
  • 1 egg (50 g / 1¾ oz)
  • 1 onion (50 g / 1¾ oz) — finely chopped
  • 2 cloves garlic (6 g) — chopped
  • 1 handful of fresh parsley (5 g) — chopped
  • 1 tsp oregano (1 g)
  • salt and pepper, to taste

Method

  1. In a large bowl, combine the ground turkey, egg, finely chopped onion, chopped garlic, parsley and oregano.
  2. Mix everything with your hands just until combined — overworking the meat makes it rubbery.
